FRUITY COFFEE CHERRY TEA FROM HONDURAS
 

Preparation :
Pour 10 g of Cáscara with 300 ml of 90 ° C warm water and let it steep for 4.5 minutes. Can be drunk warm or as an iced tea.

 

Recipe for delicious Cáscara ice tea concentrate:

Cook 40 g of Cáscara, 750 ml of water, 500 g of whole cane sugar, 2 sticks of broken cinnamon, 4 crushed cardamom pods and 50 g of finely chopped ginger for 10 minutes, then let everything cool in the pan. Pour through a fine sieve into a sealable bottle and store in the refrigerator. Serve like syrup diluted with water and with plenty of ice and lemon juice.

 

Caffeine content :
Cáscara has an invigorating effect. According to our preparation suggestion, 300 ml Cáscara tea has about one and a half times as much caffeine as an average espresso.

 

Manufacturing :
Most coffee is washed in Honduras. In this processing process, the fruit shell of the coffee fruit is separated from the core immediately after harvest and, for example, composted and used as a fertilizer additive. The fruit remains are separated from the core in a water bath. If, on the other hand, the whole coffee cherry (fruit and pit together) is dried after harvest (natural method) or the coffee is processed using the honey processing method  Further processed, the cáscara can be obtained from the dried fruit. With our Cáscara came the "natural processing method"  to use.

 

Origin :
We obtain our Cáscara from yocafe.ch GmbH. It comes from the  Finca Los Catatores  by Iván Vásquez and his wife Yolibet Pineda. They live in Marcala, Honduras. Your finca is located approx. 20 km outside the coffee capital Marcala in San Miguelito, Santa Ana, near the border with El Salvador at 1675 m above sea level. M. This is where Lenca mythology and nature come together. Variants such as catuai, bourbon and even geisha grow on seven manzanas (= 5.25 hectares). Good two  other hectares are forested, so the natural water source on the finca is protected. The so-called “palo brujo” witch tree, which plays a very special role in the Honduran Lenca mythology, even grows on the finca.

Iván was a catador (quality inspector) at the RAOS cooperative in Marcala for a long time and is an internationally recognized catador. In addition to the Finca Los Catadores, which is also open to tourists, Iván and his wife Yolibet run a small supermarket "Mercadito Heidy"  in Marcala. In front of your Mercadito you can enjoy various coffee specialties in the best barista style.
