LIGHT ROAST
This coffee comes from the Finca Santa Rita by the coffee makers. A tiny experimental batch of 4 kilos with a prolonged fermentation. The whole cherries were fermented in the tank for 10 days, then naturally dried on raised beds for 25 days. A wonderful sweetness paired with a slightly fermented note and a sparkling, interesting acidity. Must have tried!

::: Water 75 °C first pour 50 gr water, blooming for 45 seconds
::: water 95 °C second pour 50 gr
